You can generally tell if an animal is tamable by hovering over it and looking for a "Max Level" in it's tooltip.  If there is a max level listed, they are generally tamable.  If it is not there, they aren't tamable.

  Single (left/right??) clicking on tamable creatures should also give the option to [Tame] in a toggle box. I do not know which click it is... left or right. I do believe it is the same, click used, when toggling on, or off, item insurance; though. But the hovering option is smartest. Unless you are trying to tame it right away.  :o
